Plus it’s SWEET SATURDAY! My cousin sent me this recipe about a week ago and I want you to know I’ve tested it out. I made the first batch with one egg and the second batch with two. I prefer a “dryer” cheesecake but Derek didn’t even notice. They are super simple and super delicious!

Mini Cheesecakes (Cecillia Mayall of Cortez, Colorado)
12 Nilla Wafers
2- 8oz. Pkgs Cream Cheese
1/2 c. Sugar
1 tsp. Vanilla
FOIL Cupcake Liners
Fresh fruit or canned fruit pie filling for topping
Preheat oven to 325 & line muffin pan with foil liners.
Place a Nilla Wafer in bottom of each liner.
Cream together other ingredients.
Fill liners equally
Cook 20 minutes
Top with fresh fruit or pie filling & enjoy!!
