One thing you must know about Derek is that he’s persistent. He doesn’t wear down or out. When he wants something you should just give it to him because he’ll get it sooner or later. :-)
I finally emailed his mama to get the recipe. Then I waited 2-3 weeks to ponder this soup. Then I decided today was the day. I’m facing this Clam Chowder head on!
I’m laughing at myself now because it’s super simple and delicious.
So here is the recipe and even if you’ve never stepped foot in a kitchen, you can do this. Remember that you can modify all the recipes I’m going to share here. Make it your own and let me know how you liked it.
Clam Chowder (Debbie Alvarez of Tucson, Arizona)
Cube 2.5 pounds of red potatoes skin on
Boil in salted water until soft
Add 2 pints of heavy cream
Add 2 cans of minced clams
Season with salt, pepper and garlic salt to taste
Bring to a low simmer
(Add cornstarch to thicken if necessary)
(Add milk to thin if necessary)
I used these measurements for Derek and I but if you’re like Debbie was, with four men to feed you’ll want to double the recipe.
