Although Derek and I won’t be having any Mexican food or margaritas this year, we are celebrating!
While talking to my mother-in-law yesterday she mentioned this festive recipe that is just perfect for today (or any day you need a little tequila). Let me know how they turn out and be sure to have one (or two) for me!

1 package Yellow Cake Mix
Water, Eggs & Oil according to package
1-1/2 envelopes unflavored gelatin
3/4 cup margarita mix
3/4 cup tequila
Green Food Coloring
Green Decorating Sugar
2 cups butter at room temperature
6 cups powdered sugar
*Bake cupcakes with liners according to package directions
*In microwave safe bowl sprinkle gelatin over margarita mix; stir to blend
* Let stand until softened, 5 – 10 minutes
*Microwave on high at 15-second intervals until melted
*Stir in tequila and tint with 2-3 drops of food coloring
*Chill for 35-45 minutes, until thickened*Using a knife or small measuring spoon cut out 1-1/4″ round, 3/4″ thick piece of cake from top of each cupcake and save the cake pieces.
*Spoon about 1-1/2″ teaspoon gelatin into each cupcake and then top with cutout cupcake piece pressing down slightly
*Grate 1 Tablespoon zest and squeeze 1/4: juice from limes
*On medium speed beat butter until fluffy 1-2 minutes
*On low speed gradually beat in powdered sugar, then zest and juice
*Beat until light and fluffy on medium-high 2-3 minutes
*Frost cupcakes*Mix 4 teaspoons sea salt with equal amount of green sugar and sprinkle along edges of cupcakes
*Top cupcakes with a quartered slice of lime
If you want to be really festive, place cupcakes in margarita glasses rimmed with colored salt/sugar mixture.
