We’ve been in Saranda, Albania for about 10 days now. We’ve been busy unpacking, requesting internet, trying new restaurants and looking for a super market.
There is a beautiful farmer’s market just down the road from where we live. Villagers come into town early each morning with organic tomatoes, cucumbers, onions, carrots, eggplant, and peppers. I even found some perfectly ripe strawberries two days in a row – what a treat!
After scouring the entire city I could not find a good market so I created a system. At one market I could get good tea, bottled water and Greek yogurt. At another I could find the best biscotti, coffee and oatmeal. Another one had good cheese and eggs.
But then Derek spotted Alpha Market.
From the outside it looked like it could be the market of my dreams and we patiently awaited the Grand Opening. Yesterday I got to shop there (twice – I couldn’t stay away).
Prices on everything
Imported items from Greece
Thirty different chocolates
I came home and told Derek that the opening of this market made my MONTH! I had been short on inspiration in the kitchen, but not anymore. Here’s the recipe for the stuffed peppers I made last night.
Hungry for More, Monique Alvarez *Have you downloaded my free ebook, The Hungry Soul’s Manifesto? It’s all about remembering what’s important in life – creating purpose and passion, instead of just passing the time amassing stuff. p.s. If there are typos, spelling or grammar mistakes in this post don’t worry about. Those are the kinds of things I’ve worried about for FAR too long. It’s time to just get it out and who cares if it’s not perfect, it’s from the heart!
Anaheim or bell peppers
Preheat the oven to 350.
Cook up the ground beef and set aside.
Boil water and add rice, olive oil, salt, finely chopped garlic, onion, tomato, carrot and a pinch of cayenne pepper (and whatever else you like).
Wash and remove seeds from peppers. Place in pan, drizzle with olive oil and season with salt. Put in oven until tender.
Add ground beef to rice and stuff the peppers. Place in oven for five more minutes. Enjoy!
