I hope you all enjoyed the holidays. I knew so much food was being cooked up that I took a couple weeks off and enjoyed some of my own home cookin’.
I’m currently hooked on a certain kind of salad but I love steak so I’m combining two of my favorite things for this delicious meal.
If you’re not a Colorado girl who was raised on the good stuff you could always use salmon or make it completely vegetarian.

Skirt Steak Salad
Spinach or Arugula
1/4 c. Toasted pine nuts
Fresh parmesan cheese (if it doesn’t require refrigeration, don’t eat it!)
Your favorite dressing (I like Trader Joe’s Greek Style Salad Dressing)
Himalayan Pink Sea Salt
(Any favorite veggies)
Layer the greens on a large plate. Put pine nuts in small pan on medium heat, tossing frequently until golden brown. Add pine nuts and parmesan cheese to greens and layer up thin slices of your skirt steak. Top it all off with salad dressing and sea salt.
