I love dishes that are great for breakfast, lunch or dinner and Derek and I have had this one for all three!
I figured this would also make for a great weekend brunch. I like to add a small bowl of blueberries or raspberries covered in heavy cream on the side for the perfect meal.

Scrambled Eggs with Smoked Salmon and Capers
6 organic, free-range eggs
1 tbsp capers
3 oz. Alaskan wild smoked salmon
1 tbsp salted butter
Pink Himalayan Sea Salt
Melt butter in pan on medium heat. Add eggs and scramble. Cut salmon into small pieces.
When eggs are 80% cooked add capers and salmon. Finish cooking and add salt to taste.
