I was thrilled to find our new kitchen here in Albania was ready to go. I just needed to organize my dishes, pots and pans and learning what ingredients I had to work with. Local markets are on every corner so it’s easy to find fresh, organic produce.
I made this soup a couple days ago and it was a big hit with Derek and Danny (my brother-in-law). I served it with fresh sourdough rolls that Danny picked up from the bakery that’s just down the road. You can go pick up warm bread twice a day. I never ate bread in the U.S. but as I tell Derek, the stuff here is worth the calories!

Rosemary Chicken Soup
1 whole chicken
4 cloves of garlic
1 tbsp rosemary
1/2 tbsp basil
salt and pepper to taste
Fill large pot with water and the chicken. Chop all veggies about the same size and add to water. Cover and bring to a boil. Reduce heat and simmer for one hour. Serve and enjoy.
