I hope you’re having a lucky Friday the 13th. Today I’m sharing one of my favorite dinners but I must confess I have had this loaded sweet potato for breakfast a few times and I loved it.
I’m not into having marshmallows on my sweet potato…My favorite combination is a loaded sweet potato, asparagus and turkey bacon. I’m sure you’ll come up with your own perfect combo.

Loaded Sweet Potato
Butter (please do NOT use I Can’t Believe It’s Not Butter)
Pink Himalayan sea salt
Cracked black pepper
Put sweet potato in a 400 degree oven for about 60 minutes or until tender.
Cut open and slather with butter. Toss in some feta cheese and chives. Finish off with salt and pepper.
Serve with sauteed asparagus and turkey bacon.
