This week I want to share the chef salad I made for lunch this week. Of course I recommend organic ingredients and taking time to really enjoy each bite. It’s absolutely perfect for summer.
Thinly sliced chicken
4 hard boiled eggs
4 slices of bacon
Cut all veggies about the same size and put into bowl. Quarter boiled eggs. Tear cooled bacon into small pieces. Cube chicken. Add protein to veggies. To make the homemade dressing put the juice of one lemon, olive oil, salt and garlic in the Bullet for a few seconds. (I don’t have a Bullet or food processor here so I just finely chop the garlic, add lemon juice and olive oil to salad and toss.) Enjoy!
