While walking through the farmer’s market last week I saw artichokes for the first time. I skipped home with a kilo of them, thinking about how I would cook them up here. I forgot to take a picture of them as they were beautifully arranged in the pan, but this one shows just how delicious they were!

Bring a large pot of water to a boil. Add 3 tbsp of olive oil, 2 tbsp butter and lots of salt. Cut ends off artichokes and throw in hot water for 30 minutes or until tender. Remove artichokes from water, cut in half and arrange in pan. Coat each one with olive oil. Sprinkle with salt and cheese. Bake for 10 minutes at 350 degrees. Remove, let cool for a few minutes and enjoy. (We had ours with a salad and rotisserie chicken.)
